In this special bonus episode of Las Vegas Weekly’s Second Helping podcast, we’re introducing you to Jaimee Pepe, executive room chef at Twin Creeks Steakhouse at the Silverton.
Jaimee first left her native New Jersey to pursue a culinary education in Las Vegas and after working as a sous chef at the Standard Hotel in New York City for four years, she decided to return to Vegas and landed a job at Giada at the Cromwell. Cooking in New York and on the Las Vegas Strip provided Jaimee with vastly different experiences that prepared her for her current role leading the kitchen crew at Twin Creeks, a locals’ favorite.
“Out here you have to work in a different manner,” she says. “I love the relationship that I have with my cooks now. Out here, you’re more on a personal level with everybody, which is really cool. Vegas is a small town. Once you’re in it, you know everybody.”
Jaimee talks about how her family inspired her career and the excitement of working with celebrity chef Giada De Laurentiis and Caesars Entertainment, and also shares the behind-the-scenes details that separate Twin Creeks from other Vegas steakhouses and a few of her own favorite local restaurants. And we follow her into the kitchen for a daily prep session as she gets ready for a busy Valentine’s Day dinner service.
