Blinders Burgers & Brunch aims to entice all with its plant-based menu

If we waited to tell you Blinders Burgers & Brunch was a plant-based restaurant until after you’d tried their dishes, you might not believe it. And that’s precisely what the new fast-casual restaurant is going for.

The northwest Valley’s newly opened Blinders comes complete with a drive-thru—and a mission to get the masses through the door. “We wanted to create a place where everyone could sit down together and enjoy a really great burger and a beer, no matter your dietary needs or restrictions,” says Blinders spokesperson Heidi McGuire. “While our main goal isn’t to convert carnivores to a 100 percent plant-based diet, how cool would it be to spark the interest of someone who never experienced how good plants can be?”

The menu features breakfast eats like the Mornin’ Muffin with sliced tofu and a potato patty topped with cheese and served on an English muffin; sandwiches; shakes (oh, the shakes!); and a burger section featuring three separate options for patties —the Impossible Burger (which starts at $10, one of the lowest price points in town for the eerily meat-like creation), the Beyond Burger and a veggie burger.

Partners play a big role at Blinders, which brought in not only the popular Herbivorous Butcher (specializing in plant-based meats) but also local purveyors No Butcher, Virgin Cheese and Nourish Creamery and Juice Bar.

Look for Blinders to morph into a full-service spot for its weekend brunch and eventually open a second location.
